Taking the Bad and Making it Good!!!

So in my quest for optimal health there are some foods I chose not to eat, pizza is one of them.  I love pizza and do still have a slice or two on occasion but I try hard to stay away from this delicious slice of heaven that is not friendly to my mid section.  So I went on a quest to find a pizza that was good for me and that was delicious too.  I have to say I think I have found a winner.  It is called Fooled Ya Pizza and the recipe is from the book Trim Healthy Mama.  When I first started the process of making the pizza I was doubtful as to how it would turn out and thought it was making a lot of pizza.  I was worried about wasting all the ingredients if it was not a winner.  But, I carried on and went to work.  

Now to get to the recipe!  First you start off by lightly steaming fresh of frozen cauliflower, I used fresh.  After you have steamed the cauliflower you put in a colander and try to press all the water out of the cauliflower.  I then took the cauliflower and laid it between 2 paper towels and pressed out as much water as I could.  I repeated this until the towels came out almost dry.  The more water you get out the crispier the crust will be.  I love a crispy crust!

You then put the cauliflower into a food processor, I used my Ninja and pulse it until the cauliflower becomes the size of rice, don't over do it. 

Then you will add 3/4 cup egg whites and pulse again just a few times to mix in the egg, again don't over do it.  You can also use full eggs, I used 2 eggs and 2 or 3 egg whites.

Then add 2 cups grated part skim mozzarella cheese, pinch of sea salt, dash or two of Italian seasonings, I used Oregano and Garlic Powder and Basil, season to taste.  I also put a couple of dashes of Cayenne because to me everything is better spicy!

Mix Ingredients together with a spoon inside the food processor.  It will look like this.



Now, line a large cookie sheet with parchment paper and grease well, I used EVOO.  I think this step is important to not only keep it from sticking but help with the crispiness, again I love crispy.  I thought my cookie sheet was to big but it wound up being perfect. My cookie sheet 12 x 16.

Put the mixture on the parchment paper in the middle and start spreading outwards with a spatula or your hands, I used my hands, made it a lot easier.  Crust should be thin and even throughout.  It will look like this.



Bake the crust at 450 degrees for 20 minutes.  As suggested by the recipe I turned the crust over at 15 minutes so the other side could get crispy.  I took another piece of parchment paper and laid it on top and kind of drug the crust along sheet while flipping leaving the new parchment paper on bottom.  I let my crust cook a little longer than 20 minutes to give it some extra crispiness.  

While the crust is cooking chop up the toppings that you desire.  I used chicken breast, green bell peppers, onions, tomatoes, mushrooms, jalapenos and mozzarella.  I didn't use a lot of mozzarella because the crust already has some in it. 

After the crust is finished let it cool for 5 minutes or so.  It will look like this.




Now for the sauce, as recommended in the book Trim Healthy Mama, keep your sauce to less than 3 grams of carbs.  I could not find any at HEB so I got Tomato Sauce and added a little Oregano and a pinch of Sea Salt.  The book also mentions that you can use 3 TBS. Tomato Paste with 3 TBS. water, Oregano and Salt.  I could not find any Tomato Paste with less than 3 grams of carbs either so I went with Tomato Sauce.  It turned out great.

After crust has cooled, add your sauce and toppings, then the mozzarella. 



Put it back in the oven and Broil until toppings are done.  Keep an eye on it so you don't burn it.  I had mine in for about 5 minutes.  When it is all done it will look like this, pure deliciousness!!!  As you can tell by the picture my family cut into it before I could even get a pick of the finished product.  



Cut the slices smaller as bigger slices can be droopy.  We even found it easier to eat if you cut the slice so that you could hold it like a taco.

This recipe was a bit time consuming but sooooooooooo worth it!  We will definitely make it again and again.  My family could not get enough of this tasty treat.

Fooled Ya Pizza from Trim Healthy Mama

Ingredients:

Cauliflower
Egg Whites
Part Skim Mozzarella Cheese (I grated my own because remember the ones that are               already gratedcome with unnecessary fillers that our bodies don't need).
Sea Salt 
Oregano
Garlic Powder
Pizza Sauce (I used Tomato Sauce and Seasoned with Oregano and a pinch of Sea Salt)
Desired Toppings 

Directions:

1.  Lightly steam cauliflower
2.  Put cauliflower in colander and press water out.  I then transferred to paper towels and pressed between two paper towels to get more water out and repeated until towels were almost dry.  The dryer, the crispier the crust.
3.  Put in food process and pulse a couple of times until cauliflower is rice sized.
4.  Add in 3/4 cup egg whites.  You can use whole eggs or a combination of egg whites with whole eggs.  The more yolks you use the higher the calories.
5.  Pulse a couple of more times in food processor just to mix in egg.
6.  Add in 2 cups of grated Mozzarella cheese, a pinch of sea salt, a dash or two of Italian seasonings to taste, I used Oregano and Garlic Powder.
7.  Mix ingredients together with a spatula while still in food processor.
8.  Line a cookie sheet with parchment paper and grease well.
9.  Pour mix on parchment paper and press with spatula or hands until mix is evenly distributed on pan.  Make sure it is thin and even.
10.  Put in oven and bake at 450 degrees for 20 minutes.  I turned over at 15 minutes.
11.  Pull pizza out and let cool for about 5 minutes
12.  Add sauce and toppings and then mozzarella.
13.  Broil in oven until toppings are done, about 5 minutes but keep an eye on it so it does not burn.
14.  Slice and enjoy!!!
